Nigel likes vegetable based cakes and sweet dishes, they can provide a beautiful natural sweetness and they help to keep recipes nice and moist due to their natural water retention properties. Vegetables also offer their own unique flavours, many of which compliment sweet dishes like cakes perfectly.
For his Beetroot seed cake, Nigel Slater uses cinnamon and muscavado sugar for a wonderful depth of flavour and lemon juice and sultanas help to add sweetness and sharpness. Nigel adds 150 grams of beetroot and a mixtures of seeds to his beetroot cake, including sunflower, pumpkin and poppy seeds, and he finishes his icing with orange blossom water.
Tips for Nigel Slater’s Beetroot cake
- A loaf tin suits this recipe better than a round cake tin, remember to line with baking parchment.
- Sift your dry ingredients together to ensure a good mix.
- Add your egg yolks one by one while stirring your cake mixture thoroughly.
- Grate your beetroot coarsely, much like carrot cake, you want to feel and taste the pieces of beetroot.
